I was in the mood for some chicken dish yesterday and came across a slow cooker chicken recipe with taco seasoning. Made using leftover beef from the holidays, taco meat, and corn (or bean) stock. Spiced with cumin and chili powder, and then sauteed in a skillet with onions, bell pepper, cilantro, and garlic. Cooked on the stove top in an instant pot or in a pressure cooker. The resulting chicken curry was tender, flavorful, and full of protein.
Keto Dinner With Coconut Chicken
Surprisingly good! I didn’t put coconut oil in the pot, but it added a lot of flavor and gave it a little more of that coconut flavor. I didn’t change the carb dinners, just adjusted the sugar.

A favorite of mine is a traditional chicken recipe with parmesan sauce. I actually did use cream cheese but used reduced fat parmesan and added chopped mushrooms to the sauce. It was delicious! Reduced the amount of cream and used parmesan instead of cream cheese, and it was delicious.

Another of my favorites was this shopping list I compiled for a friend. I have her blessing (and thanks), and it’s been getting me some great recipes lately. First, I made a spinach and mushroom soup that was delicious.
Then, I added some sliced pork sausage, some cherry tomatoes, and some red bell pepper. It was so good I had to take two of these items with me to a cookbook party the next weekend!

I decided to focus on easy to chicken breast recipes with a chicken base to make it a complete meal. I started out with roasted chicken breasts and then added some mushrooms and shawls to the mix.
Now, I usually have black beans on hand too, but this meal was complete with a nice big salad with chopped tomatoes, zucchini, onion, and red bell pepper. The kids were loving it too! It was such a satisfying meal!
Easy Keto Chicken Breast Recipes With a Sweet Corn Base: This is one of my favorite meals of all time. For this dinner, I decided to try some sweet corn salsa that I got at a food store while I was walking my dog. I love the sweet flavor of this salsa and I can see why the dogs like it so much. I blended some frozen corn into some low-fat sour cream and blended it right into a skillet chicken breast. It was so good I almost forgot the sour cream – it was just so good!
