I decided to focus on easy to chicken breast recipes with a chicken base to make it a complete meal. I started out with roasted chicken breasts and then added some mushrooms and shawls to the mix.
Now, I usually have black beans on hand too, but this meal was complete with a nice big salad with chopped tomatoes, zucchini, onion, and red bell pepper. The kids were loving it too! It was such a satisfying meal!
