Making Spicy Arrabbiata Sauce In Different Way

Preparation time – 10 minutes

Cooking time – 40 minutes

  • Butter – 2 tbsp (you can use vegan butter if you want to make it dairy-free)
  • Extra virgin olive oil – 2 tbsp
  • Garlic – 3 cloves, minced
  • Red chili pepper flakes – 1 tbsp
  • Whole tomatoes – 56 ounces (Go for the good canned tomatoes as this will make the sauce better)
  • Salt – ¾ tsp
  • Black pepper – as needed, freshly ground
  • Basil leaves – ½ cup, chopped
  • Cooked pasta – a bowl
  • Pasta water – as reserved

How To Make

  • Place a saucepan on medium heat and add the butter along with olive oil. As the butter melts, add the minced garlic as well as red pepper flakes. Fry them well but make sure the garlic does o get burnt as this will make the sauce bitter.
  • Now mix the tomatoes along with its juice to the pan. Take a wooden ladle and smash the tomatoes. Let them cook on low flame for half an hour till the sauce become thick. In the meantime, put a bowl of water on high heat. As soon as the water starts to boil, add the pasta. Boil them till they become soft. But refrain from overdoing.
  • When done, keep about ½ cup of the pasta water. Then remove the excess water and keep the pasta aside. Now in the saucepan, add the salt as well as chopped basil. If you are using salted tomatoes, then add just a little. Always check the seasoning so that you can make the sauce perfectly.
  • Add the cooked pasta along with the reserved water in the saucepan and mix with the sauce properly. To make it more delicious, you can add the parmesan on the top.
  • If you are a vegan and using vegan butter, then you can add vegan parmesan cheese.
  • You can store the sauce in an airtight container for almost a week in the fridge.
